Château de la Gaude, in the heart of the vineyards of Aix-en-Provence, had been sleeping for at least 15 years when it underwent an important restoration to bring it back to its former glory. This five star boutique hotel is made up of various areas some restored and some renovated in a contemporary, Provençal style. In the historical building of the Chateau, the rooms and suites are elegantly decorated in a minimalist style with spectacular views over the domain. The longères adjoining the chateau house the other rooms in a haven of peace in a different atmosphere with a majo- rity of wood in the decoration. For gourmets, Chef Matthieu Dupuis Baumal and his team propose an elaborate cuisine where Provencal flavours mingle with Japanese touches according to the seasons.
