Yann Bucaille and his wife, Lydwine bought the hotel and undertook a careful restoration in accordance with its history dating back to 1872. In 2015 the hotel opened as a prestigious hotel bringing it back to life after a period of abandon. Decorated in the spirit of the crazy years of the 1930’s the rooms and the suite have a sumptuous view over the Prieuré Bay, Saint-Malo and its legendary ramparts. In the restaurant, Chef Julien Hennote and his team take you on a culinary journey with an inventive, authentic, local and delicious cuisine. Awarded a one star in the Michelin guide and two toques by Gault & Millau, the Pourquoi Pas restaurant privileges local food buying using short distribution channels. L’Aquarium, the hotel’s bar, is set in the old Aquarium of the National Museum of Natural History.
