The nine-course gala dinner for New Year’s Eve includes Red shrimps on avocado, lemongrass tapioca and lime, as well as Venison on a bed of carrots and cardamom. At the Uliveto restaurant that overlooks Rome Cavialieri’s stunning landscaped park, fracChef Fabio Boschero presents delicious local cuisine revisited including Kamut spaghetti with Venus clams and a Roasted rack of veal with sautéed porcini mushrooms. Christmas yule log with orange, Bronte pistacchio and Madagascar vanilla by the Pastry Chef Dario Nuti as a final crowning of this meal. For the New Year’s Eve gala dinner, Risotto with Grana Padano aged 36 months and 24K gold flakes, as well as Veal tournedos in Nebbiolo sauce and black truffle. The festivities would not be traditional without the lentils and cotechino at midnight, the grand buffet of desserts and the spectacular fireworks over the Eternal City.
